Ingredients
For the Beef:
- 1 lb lean beef strips (such as sirloin or flank steak, trimmed of fat)
- 1 tbsp olive oil
- 1/2 each red, yellow, and green bell pepper, sliced into thin strips
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/4 cup low-sodium beef broth (or water)
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 1 tsp Creole or Cajun seasoning (salt-free if possible)
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp oregano
- Juice of 1/2 lemon (optional for brightness)
- 2 tbsp fresh parsley, chopped
For the Steamed Veggies:
- 2 cups broccoli florets
- 1/2 cup cauliflower florets
- 1/4 cup small zucchini, sliced
- 1 tsp olive oil
- Dash of lemon pepper or garlic herb seasoning
Directions
- Prep the Beef:
Slice beef into thin strips if not pre-cut. Pat dry with paper towels to help it sear nicely. - Season & Sear:
In a large nonstick skillet, heat olive oil over medium-high heat. Add beef strips, sprinkle lightly with Cajun seasoning and black pepper, and sear 2–3 minutes per side until browned. Remove beef and set aside. - Build the Flavor Base:
In the same skillet, add onion, garlic, and bell peppers. Sauté for about 3–4 minutes until peppers begin to soften and the onions turn translucent. - Deglaze & Simmer:
Add the beef broth to loosen any browned bits from the pan — that’s where the flavor lives! Return beef to the skillet, add paprika, cayenne, thyme, and oregano. Reduce heat to low, cover, and simmer for 10–12 minutes, stirring occasionally, until beef is tender and juicy in its natural sauce. - Steam the Veggies:
While the beef simmers, steam broccoli, cauliflower, and zucchini until just tender — about 5–6 minutes. Toss gently with olive oil and lemon pepper seasoning. - Finish & Serve:
Squeeze a little lemon juice over the beef for brightness, garnish with fresh parsley, and serve hot alongside the steamed veggies.
